After developing a sensitivity to oak tannins,my wife is searching for wines which are not aged in oak. Are all Chablis finished in stainless steel? Please send some suggestions...Help !

The last time we were there (about fifteen years ago) Callaway Vinyards were only resting their Callalees Chardonnay on their lees and not subjecting it to any oak.

Chablis is not always a safe bet for no oak. Some are pretty heavy in fact, but this trend is lessening. Try Alsace or Germany for safe bets. Loire valley is also a good place. Red wines are going to be very hard to find in no oak category. Callaway is a great suggestion as they even produce some no oak reds, but whites are their forte. Kim Crawford from NZ also makes a no oak chard.
Chard is always going to be the hardest white to find sans oak, especially from the New World.
