I would like to know how long an open bottle of Cabernet Sauvignon will keep in the fridge? Will wine make you sick if you drink it after it has been stored open for a long period of time (weeks)?

Often a hotly debated subject. The best thing to do, obviously, is to drink the wine. Placing the remains in a half-bottle cuts down on air space and oxidation of the wine. Vacuvins do not work very well. Private Preserve provides a protective blanket of nitrogen over the wine, and seems to work best, especially if refrigerating. In any case, you should drink the the wine within 3-4 days for taste appeal. There are no health risks from leaving the wine in the fridge for longer periods that I know of - it will just deteriorate in taste.
