Today the nifty little page a day wine calendar that I was given as a Christmas present is telling me about a "full-throttle, pedal-to-the-metal, juicy, extracted, pinot noir". When my calendar uses the word extracted in this way, what does it mean?

Usually refers to red wine. Means that a high level of soluble solids, including tannin and other phenolics are extracted during fermentation. Produces dense, concentration in wines that are meant to have positive results, but are freqently overdone.

I also expect the wine to have maximum flavor profiles when the winemaker uses that descriptor. WW

Usually happens when winemakers allow the fermenting wine to remain on the lees a bit longer under slightly higher temps which does what IK said.
