- Tyrrell - 01-06-2004 Today the nifty little page a day wine calendar that I was given as a Christmas present is telling me about a "full-throttle, pedal-to-the-metal, juicy, extracted, pinot noir". When my calendar uses the word extracted in this way, what does it mean? - Innkeeper - 01-06-2004 Usually refers to red wine. Means that a high level of soluble solids, including tannin and other phenolics are extracted during fermentation. Produces dense, concentration in wines that are meant to have positive results, but are freqently overdone. - winoweenie - 01-06-2004 I also expect the wine to have maximum flavor profiles when the winemaker uses that descriptor.
