thankyou for replying Innkeeper. What kind of wine do you suggest for collecting? Also, someone told me after opening a bottle you need to refrigerate it. Is that true and what kind of wines are suppose to refrigerated?

Rose's and whites should be chilled, either in refrigerator or wine bucket before serving. You can actually store these in the refer if you choose, and have more room there than in you cellar. The Valpolicella and even the Beaujolias can be chilled a little before serving. The Cabernet and the Pinot Noir should be served at "cellar" temperature or 65 degrees (F). It is not recommended to recork wine that has been opened. Oxygen destroys wine very quickly. There are expensive systems you can get that suck the air out of the bottle and/or replace it with nitrogen. You can for a day or two try putting the leftover wine in a container it barely fits it. The best bet is to drink it at one sitting. Not knowing how much you want to collect, it is hard to know where to start.
