This may seem like a weird question, but when you're tasting wine, how long do you keep it in your mouth? Is it unusual to hold and taste a slurp of wine for 30 seconds or more?

I ask because more and more I'm tasting a slurp of wine for a good long time--usually for 10-20 seconds, and sometimes a bit more.

If I'm trying to detect the flavors and aromas that others detect, am I overdoing it? I mean, if the "start" of the taste takes maybe a couple of seconds or so, and if the finish has its own longevity after the swallow, can a "center palate" experience legitimately last for 10-25 seconds? Or are there other stages I should be looking for?

How long do tasting note writers such as Parker, Suckling, Bucko, and others hold and savor a gulp of wine? If the time frame is shorter than the 10-30 second average I've been doing, is it because the advanced tasters just know what to look for and therefore don't have to retain the juice unless they really want to (or have the time)? Or is my time frame average or below average?

I apologize if this is a dumb question; I really don't have friends who are as interested in wine as much as I am, so I don't have other tasters in my world to bounce these issues off of.

Hi again Q and first let me say I have never tasted with Big Bob but the way most of the guys I know taste when they are in tasting mode is this; Take a fairly good mouthful of juice, swirl it around in the mouth to cover ALL the buds, draw in some air and swirl, then spitout the wine.( I've yet to spit ennythin' that comes close to tasting good). Then by rubbing you tongue on your palate and letting the aroma go into your nasal passages you get a real handle on the wine. I personally don't think 30 seconds are too long to hold the wine for evaluation. My style is the 3-G method...Grab, Guzzle, and Giggle. WW

However long it takes for you to swirl and evaluate is however long it takes you. There is no time limit, but ww gives a good description of the method--if you disregard that 3G stuff, which I am sure he does, and that is why he has such a large, red nose...

The tasting method described is pretty much what I've been doing, but I've wondered if maybe my taste/aroma sensors are so overworked from years of high-voltage chile pepper consumption, that what I need thirty seconds to do, others do in ten. It's good to hear that my time frame is pretty much on target, though I certainly feel like a dork sucking in air and chewing wine around when everyone else is sipping and swallowing....

Oh well, I'm a happy dork.

I wouldn't say his nose is big, but you CAN squeeze a quart out of it at any given moment...... ahem.

As a newbie, I like to take a average mouthful of wine, swirl all around ...up where the gums are....down where the gums are, swallow a little bit, then take in a little bit of air and repeat from step one. I find if you have too much wine in the mouth and you take in some air, you will end up drooling some of the wine from your mouth

I would assume that having the wine for too long a time in your mouth COULD prevent ones taste buds from recognizing certain flavors and aromas. Wine is an alcohol afterall, and the alcohol may saturate your buds to the point where it overwhelms everything else. Anyways, that is just my thought!

WW>>>what is the purpose of spitting the wine out after all that work??

- winoweenie - 04-18-2003

Beats the blazes outta' me C-Boogs. The pros tell me that by spitting they can get thru the tasting sessions without getting drunk...... Like spittin' out the Filet Mignon so you wont get full??????? The only drops that escape these grim lips are out by accident. WW

Hey, ww, too much Filet Mignon won't get you drunk. Running the floor at a wine show or winery tasting rooms without spitting certainly will.
