Hello all. Question on sparkling wines. Is it necessary to drink the entire bottle the day/evening you open it, or can it be re-stopped to be finished the following day?

Yes you can keep it for the next day - but why would you want to?? Only kidding.

If sealed properly it should be fine but it won't last forever.

Have you thought about buying a 1/2 bottle instead? This way you won't have to worry about having a proper stopper becuase you know you won't get that cork back in there.

I would love to try the half bottle, but don't find too many options around here. Any brand suggestions? Thanks.

You're not looking hard enough, marleyspud. If you really wanted to, I'll bet you can find at least Laurent-Perrier, Veuve Clicquot Ponsardin, Moet & Chandon White Star and a few others, including that ever popular Korbel Brut.

The aforementioned Sportsmans has LOTS of 1/2 bottlings. WW Invest in a can of "Private Preserve". This will protect even bubblies for a day.
