hello again:

what different kinds of wine come from Alba? rosetto rice, on this cooking show, made me forget the name of the wine that comes from there...anyone have a clue?

dolcetto! w00t!

and they had recipe for wine sauce using this: portion (3rd bottle maybe) of wine in pan medium-high heat, sugar to take acidity away, 1 bay leaf half-torn, then flour (enough to thicken as a sauce) then they turned up the heat to light it on fire, to get the alcohol out of it, and pour onto whatever (that was a pumpkin/rice concoction)

Dolcetto translates into "Little Sweet One" although you might be surprised when you try it because it might not be as sweet as the name implies!

aetre, the dish is risotto (not rosetto). Riso is the word for rice in Italian.

More importantly, the color of the sauce that adding red wine gives makes the risotto dish look rather strange to me. Had it in a restaurant once, and won't say what it reminded me of sprawling in a blue/gray--yuch.

Foodie's got that right. A risotto with red wine in it looks very unappetizing.
