How do you tell if a wine is old (besides looking at the label)? What components of wines are affected most with aging? Thank you very much to anyone who answers.

Old white wine darkens and turns brown. Old red wine lightens and turns brown. Both caused by oxidation. The alcohol turns into vinegar.
