My wife just returned from Banff with two bottles of Ontario icewine, one from Inskillin and the other from Reif Estate. Does anyone know anything about icewine? I've never had it before, and I know this sounds silly, I don't even know if I should drink it out of a cordial or a white wine glass or a good temp at which to drink it.

Drink it out of a dessert wine glass (tiny, tiny, more vertical than wide), ice cold. This will insure that you will only drink a tiny, tiny bit at a time, and last a long, long time.

The name gives you the method of production of this gorgeous elixer. The grapes (normally riesling) are left on the vine until the first hard freeze. They are then picked brfore sun-up, pressed and maybe you'll get a drop a berry as the water is frozen. I.E, the concentrated juice has elevated sugar levels with all of the components heightened. Have heard many great things about the Canadian version. Have in my cellar some 1983 German Ice-Wines that are nothing short of stupendous. Because of their elevated sugar levels, like sauternes, they age their patooties off. WW

dananne, welcome to the board. I have several bottles of Peller Icewine Niagara Peninsula Vidal. The wine offers a wonderful experience with a weighty, oily mouthfeel and bold flavors of honey, apricot, honey and peach. Unlike anything I've tasted, and I'm no authority on Icewine, this Canadian treat is a delight and is difficult to find in my area. Share it with your wife during a desert course and prepare to fall in love.
