We would choose a Pinot Grigio. Tommasi offers a nice one for $10-$12.

Sangiovese works well.

Assuming you are adding a tomato sauce to the dish, go with a red like Chianti or Sangiovese. For a real treat try Salice Salentino, Brindisi, Primitivo/Zinfandel.

Just knew that the Salice Salentino would surface here. Salice is getting so popular that you can even get it around here now. Stand by for a price hike. There is a head to foot one third page full color ad for Candido's in the current W&S (October). As me ole Irish grandmother used to say, "Hell's bells."
