Cook bacon and drain, saute a Granny Smith Apple. Make a heated dressing with sour cream, Camembert (rind removed), apple cider, apple vinegar, salt and pepper to taste.

Arrange bibb, boston or butter (whatever you want to call it) lettuce on a plate, drizzle with olive oil and fresh lemon juice, add the warm sauted apples and crumbled bacon. Top-off with the dressing.

Grill a hamburger and a portabella mushroom. Dress the mushroom and the burger with a small slice of Camembert and butter.

Tonight I'll be having this combination with a glass of 2002 Rosemont Grenache/Syrah which is currently selling locally at $10.39 for a magnum.

Don't have Camembert? Use Brie instead.

Wow, does that sound good! I would hit it with a Rosé Champagne....

That does sound delicious! Do you saute the apple in bacon drippings or butter or vegetable oil? Some salads with apple go nicely with a Macon white wine (tart apple flavors in the chardonnay which has not been through malolactic fermentation) but with the bacon I might go to a rose or light red wine instead.

The apples are sauted in the pork fat rendered from the bacon.

Sounds delicious, and it would be easy to make a low-cal version using turkey bacon amd low fat sour cream. Yum!
