Bottle aging allows wine to acquire complexity, depth, and fine texture in the bottle. Some of the finer wines, in particular the red wines, require the consumer to adhere to this process. Bottle aging is also known as aging "on the yeast" or "en tirage".
It is common for wines which have just been bottled to display smells not unlike hot plastic. These off smells dissipate over time. Wines which have been subjected to harsh conditions during shipment will also often go through periods of bottle sickness....
