A sugar and wine mixture added to establish the level of sweetness in finished champagne. Traditionally, champagnes designated as “Brut” receive the minimal dosage, and subsequently have little perceptible sweetness. Those considered “Extra Dry” may have a slightly sweeter presence, while the “Demi-Sec” and “Sec” tend to be more noticeably sweet.
