In the past this term referred to the practice of grape growers who, having no buyers for their fruit, would have them “custom crushed” and made into wine at a winery willing to perform the service. It is now commonly used to refer to winemakers and vineyard owners who contract with a winery to use their equipment, space and staff, and is often part of a planned business venture (being then a matter of choice rather than fortune).
