From the French, "on the lees." The "lies" or "lees" are the residues of yeast fermentation which are deposited at the bottom of a fermentation chamber (barrel or tank) as fermentation proceeds. Allowing wine to remain on the lees for an extended period of time enhances and deepens the flavors of the wine.
