A term used to denote quality wines which have yet to reach their peak. The term is often applied to wines which are very tannic and therefore can be described as hard. They can take years of bottle aging in order to become "drinkable." The term can also apply to periods in a wines life where, in the bottle, they are more or less unapproachable and lack any bottle bouquet.
