bentonite
A natural Wyoming clay which contains montmorillonite (a derivative of volcanic ash), which can be added to wine to remove the grape proteins remaining in solution. Bentonite carries a negative charge and attracts the positively charged proteins, removing them by precipitation. Otherwise these proteins might denature over time, causing a haze to develop in the wine (especially when stored in warm-hot conditions).
